I'd like to measure water activity with the KJT270. Can this be done?

Generally there is a direct relationship (per product) between Aw (water activity) and moisture. If you have an Aw meter and have the KJT already calculating moisture, you can determine this.

If not, vary the Aw (actually moisture) on the samples, measure the abs and do a calibration. You can then calculate the Aw.

If it's the same product where you are measuring moisture and other components, you can simultaneously see moisture, protein, oil, alcohol and sugar (as examples) and Aw in one test.
